No bread bruschetta.

This twist on the Italian favourite will give you a massive dose of vitamins and a very low amount of carbs, making it the perfect side dish to bulk out your BBQ plate!

- Thickly slice an aubergine, and griddle each side.
- Mix fresh green pesto, beetroot, celery, spring onions and tomatoes.
- Lay out a bed of spinach, watercress and rocket. Layer the Aubergine and then pile the pesto mix on top.

Finish with some black pepper and balsamic ginger glaze.
