Peanut banana flapjacks


Banana bread meets flapjack in this super quick and healthy treat. A great alternative to shop brought high sugar bars these guys will take you around 25 minutes to make and bake. This mixture of oats and chia seeds will mean your feeling full for longer while giving a little protein hit too!

What you’ll need:
450g Jumbo or Gluten free oats.
2 Table spoons Chia Seeds
1 Table spoon Algarve syrup
1 tea spoon baking powder
1/2 tea spoon salt
2 tea spoon cinnamon
1 teaspoon vanilla extract
125ml almond milk (regular or soy milk would be fine)
1 large egg
2 large bananas, mashed
2 table spoons of peanut butter
You can also add in the following to change the taste, just go easy on the chic chips! 225G ( raisins, walnuts, peanuts, dark chocolate chips)

How to make them:
- Preheat oven to 180. Grease 8 x 8 pan with cooking spray & set aside.
- Mix together oats, chia seeds, algarve syrup, baking powder, salt, and cinnamon.
- Add in the milk, vanilla, and egg. Mix together until evenly combined. Add mashed bananas, peanut butter, and “add-ins”. Stir well.
- Pour the mixture into the pan and bake for 20 minutes.
- Cut into bars and enjoy!

Make them vegan: These bars can easily be made vegan using a “flax egg.” Mix 1 tbsp ground flax with 3 Tablespoons warm water and let it sit for 10 minutes while it “gels” up.
